WINEMAKING: The harvest is anticipated in order to reach more acidity. Grapes are immediatly softly pressed, then fermented in open concrete Nomblot tanks for 40 days at controlled temperature of 15° C.
AGEING: 4 months in concrete Nomblot tanks.
Spontaneus clarification and stabilization.
BOTTLING: January 2019.
PRODUCTION: 7.000 bottles of 0,75 Lt.
ALCOL: 12,00 %.
