Sebastiano is a passito made of Trebbiano and Malvasia, produced only the best years and in very limited quantities.
Grapes are either cane cut and left to dry on the vine, with harvest in December or harvested by hand just before the Sangiovese and left to dry. In each case, grapes are carefully selected on the vine and at the sorting table.

TERROIR: Soils of limestone and clay.
ALTITUDE: 450 – 500 s.l.m
VINEYARD: Gaiole in Chianti (Siena). Certificated Organic by ICEA and introducing biodynamic practices
AVERAGE AGE OF THE VINE: 25 years
YIELD 30 hl/ha.
HARVEST: Grapes are either cane cut when it gets acidity and left to dry on the vine, with harvest in December or harvested by hand just before the Sangiovese and left to dry on racks.
WINEMAKING: Natural fermentation in barriques.
AGEING: more than 12 years in French oak barrels.
BOTTLING: August 2014, by gravity. No filtration. Production: 5 000 bottles of 50 cl.
CELLARING À: Può’ essere bevuto subito e conservarsi praticamente per sempre.
TASTING NOTES: Honey, caramel and citrus supported by a brilliant acidity to give a perfect balance.
FOOD & WINE Foie gras comes as the first idea, but then the lovely acidity also leads to dark chocolate and nuts pie. Serving temperature: 12 °C.
